Oh Mae, you made a lot of sense, but too much of a good thing on this occasion (over-eating) has left me feeling bloated, sluggish and with a poor body image.

It’s no secret that I love roule cheese (Boursin or Tesco) and have discovered that asparagus and courgette wrapped in roule covered pancetta is possibly the most delicious thing on the planet! So I’ve eaten a lot of it, and a lot of everything else too!

(Last night’s dinner was asparagus and broccoli tips wrapped in boursin and pancetta, small jacket potato with applewood smoked cheddar and a crusty roll with alioli)

Combine that with not working out as much as I would have liked to, drinking less water and more wine over the weekend, and I’m not feeling great today.

So I’ve written a shopping list, made sure it’s full of whole foods with limited refined sugar and carbs, high in lean protein (there’s no cheese in sight:-() and still full of flavour so I won’t get bored or in the ‘diet’ mindset.

I think I need a new exercise challenge as well, so I’m going to have a look for some local 10kms that I can aim to beat my fresh PB.

Just a quick Monday post

It’s a busy Monday so I don’t have a long post today.

This weekend was mainly spent relaxing with family, eating lots of food and going on walks.

I ran 20km last week (10km on Sunday and then 2 x 5km sessions during the week) and I’ll be looking to reach that most weeks from now on. I also did Zumba and an at home circuit (normally a bit of random dancing around my living room and some kettlebell/body weight exercises).

Today I went to the Gym during my lunch hour and ran 4.5km in 23:38! I think that’s probably my quickest 4.5km for a while, if not ever!

A new week, a new recipe!

Happy Monday, I hope you all had lovely weekends and are ready for the week ahead. I’ve got a new recipe for you today, and my oh my it’s delicious!

My dinner last night/ lunch today was a bit like Liz’s in Eat Pray Love when she eats asparagus, prosciutto and boiled egg on the floor of her apartment in Rome. So satisfying, so simple and packed full of flavour!

I had boiled egg, yellow courgette, sourdough with Boursin and asparagus wrapped in prosciutto with even more Boursin! There is very little that doesn’t go nicely with Boursin:-)

Ingredients (makes one serving):

  • 3 slices of prosciutto (or serrano or parma ham)
  • 6 spears of asparagus
  • 1/2 large Yellow courgette
  • 1 large egg
  • 1 slice of sourdough bread
  • Boursin cheese

Method:

  1. Pre-heat the oven to 180 Celsius
  2. Cut the 1/2 courgette into strips approximately 1/2 cm thick
  3. Lay out the ham and spread the Boursin in a thin layer, covering most of the slice

  4. Roll 2 spears of asparagus into each slice of ham

  5. Place the courgette and the ham rolls onto a baking tray
  6. Spray olive oil (or your preferred cooking spray) onto the courgette and sprinkle with dry chilli flakes

  7. Put them into the oven and roast for 10 minutes
  8. Bring a pan of water to the boil and add your egg
  9. After 2 minutes, turn the heat off and leave the egg in the warm water until the vegetables are cooked
  10. Run the egg under cold water and peel
  11. Toast the sourdough and spread with a think layer of Boursin
  12. Remove the vegetables from the oven and plate everything up

I enjoyed my meal with a glass of Pinot Blanc from Alsace and it felt light yet satisfying, I think it was all the Boursin:-)

Monday weigh-in = Still 160lb but I’m starting to notice that I’m definitely less bloated and my belly is looking less rounded, wahoo!

A Sunday well spent brings a week of content

It’s Monday again, and whilst I may not have spent my Sunday fully preparing for the week ahead, we did manage to have a fun-packed couple of days spent with family and friends and I’m ready for the week ahead!

We spent some time at a new farm shop that has opened and sells fresh fruits, vegetables and meat, all very reasonably priced and so lovely to look at!

They also have an in-store bakery with delicious pastries, so I treated me and the toddler to Saturday morning croissants! To be honest, the treat was more for me, she ate some normal toast after refusing the flaky pastry, but that meant more for me so I wasn’t complaining:-)

I made a delicious mezze last night for dinner and will share some of the elements later this week in a recipe post!

I didn’t do any exercise except walking around the park and town with the little one, a lot! But I did do some squats, I might  make it into a July Squat Challenge, would anyone else want to do it?

Drum roll please – after upping my exercise a little bit and making more of an effort to eat consciously, I’m down 1lb since last week to 160lb! Only 6lb to go to reach my goal for the end of August!
