Although parma ham isn’t the healthiest food in the world, the fat replaces the need for any extra oil or salt in this recipe as it flavours the chicken during the cooking process!
Ingredients (serves 2)
2 x chicken breasts (fat removed)
2 x slices of parma ham
Pinch of Chilli flakes
Pinch of dry garlic flakes
New potatoes (Jersey Royals if in season)
Green vegetables (mangetout, asparagus & spinach work well)
Put your steamer or pan onto the hob and add the potatoes
Season the chicken breasts with the chilli and garlic flakes
Wrap each breast in a slice of parma ham
Heat a griddle or frying pan to a high heat and add the chicken
Turn the heat down and cook the chicken through until no pink remains and the juices run clear, turning occasionally to prevent burning
Remove from the pan and rest the meat
Add the vegetables into the steamer and cook whilst the meat rests
Use the pan the chicken was cooked in to sautee the spinach
Serve on a warm plate!
This is a tasty meal and the parma ham prevents this meal from being the boring ‘meat and veg’ choice.
